MALDONADO 100% Iberian acorn-fed dewlap has an extremely smooth and juicy texture, with a strong and prolonged flavor that remains in the mouth.
It is ideal for taking it in appetizers, although its true potential lies in the creativity of the best chefs when incorporating it into their preparations.
The MALDONADO 100% Iberian acorn-fed jowl is a piece of meat obtained from the subcutaneous tissue of the neck and lower muscles of adult 100% Iberian MALDONADO acorn-fed pigs, fed 100% naturally.
It is made up of skin, mixed fatty tissue and muscle tissue, and is made only with salt.
After brewing, it is naturally cured. Not masking with aromatic herbs the intense flavor of a pure Iberian product fed on acorns. Does not need cures with
aromatic herbs, which is a plus when it comes to using it creatively in the kitchen.
The ingredients used in the elaboration of the Maldonado dewlap are: pork dewlap and salt.
During its production process, the Maldonado Iberian dewlap goes through a natural curing process of more than 12 months in our dryers in Alburquerque (Badajoz).
To keep it in perfect condition, it is recommended to store it in a cool and dry place until consumption. Before consuming it, it must be removed from the packaging at least 60 minutes before and it is recommended to taste it at room temperature.
