Acorn-fed 100% Iberico Ham ARCANO MALDONADO

ARCANO MALDONADO 100% Iberian Acorn-fed Ham is the result of a bet as risky as it is successful. In its preparation we keep the entire leather of the animal. This not only preserves the acorn-fed ham in optimal conditions for longer, but also provides it with oleic acid from the acorns for longer. Thus achieving a different ham with much more flavour, an exceptional color and shine and an incomparable smell and texture.
Its fat does not oxidize or go rancid and can be used for the most part. The fat melts in the mouth at body temperature and its fatty acids are unsaturated fats that come only from eating acorns. This type of 100% Iberian acorn-fed ham must be enjoyed with a 50% proportion of bacon and meat.

Fed during his life in the meadow under strict control of grass and feed made by ourselves based on top quality cereals. Thus not losing control of the optimal quality that we want to obtain.
In the acorn season (Montanera) the animal eats as much aromatic grass and acorn as it wants, having more than 4 soccer fields for each one.

He arrives at the montanera, healthy and athletic and it is there, with the intake of acorns, where he acquires all the fat that characterizes him. That is why a pig of these conditions is so special. Every gram of bacon is pure flavor and its fat is unsaturated. Contrary to farms that fatten pigs from an early age with uncontrolled feed in their preparation. Arriving at the acorn season with a high percentage of polyunsaturated fat.

The cold winters and hot summers in Extremadura provide a serene cure with personality. Thus losing the least amount of oleic acid from acorn feed.

We wanted to give it this name that is causing so much talk because it is the primitive way of making ham. Fleeing from trends that make no sense in hams that obtain their fat from acorns, cutting the skin in a «V» and eliminating this resource acquired by the purebred pig in its environment seemed to us a sin to do so. Although its curing and drying phase is superior and therefore economically unfavorable, we decided to bet on excellence and differentiation.
