The 100% pure Iberian acorn-fed pig with an autochthonous breed from the pasture. Without crosses and raised in it is the origin of the 100% Iberico Premium Acorn-fed Ham MALDONADO.

Fed throughout its life under strict control of grass and feed made by ourselves based on top quality cereals. Thus not losing control of the optimal quality that we want to obtain.

In the montanera season (time of maturation and fall of the acorn) the animal eats as much aromatic grass and acorn as it wants, having more than 4 soccer fields for each one.

Each one of them arrives at the montanera, healthy and athletic, the result of the nutritional control and exercise of an animal in the wild. It is there, with the intake of acorns, where it acquires all the fat that characterizes it. That is why a pig of these conditions is so special. Every gram of bacon is pure flavor and its fat is unsaturated. Contrary to farms that fatten pigs from an early age with uncontrolled feed in their preparation.

The cold winters and hot summers in Extremadura provide a serene cure with personality. Thus losing the least amount of oleic acid from acorn feed.

In its tasting we notice the silkiness that the acorn provides, the unique aroma and a unique bright color.

The exquisite bite is complete when it is made with its part of bacon, noting that flavor of the countryside and ancestral Iberian acorn-fed ham.
